Truter Wines Agaat John David 2017

ORIGIN Peral and Wellington

VARIETIES Pinotage 41%, Cabernet Sauvignon 41%, Shiraz 10%, Petit Verdot 8%

PRODUCTION All varieties were manually harvested at physiological maturity and fermented in a small open stainless steel tank at 25 ° C and 26 ° C for two weeks. Pumping was performed every four hours up to 10 ° B to ensure optimal extraction of dye and tannins. After fermentation with the skins, pressing was performed and each of the varieties was stored in a specially selected French barrel. The wine matured at once. Twice and three times filled barrels for 18 months, where it underwent apple-milk fermentation. After maturing, it was mixed thoroughly to create this exceptional wine.

PAIRING WITH FOOD Pair this wine with herb-crusted debone leg of lamb cooked on the Weber with  Moroccan couscous and roasted sweet potatoes. It goes well with the Italian dish Saltimbocca (veal chop with Parma ham and sage), with a Greek-style stewed pork coat with young zucchini salad. Sustainability: Each bottle of our wines has a South African certification seal. This seal is a guarantee of the origin, vintage and variety that are listed on the vignette.
