VARIETIES White savignon 70%, New 14%, Chcenin Blanc 14%, Vognier 2%

PRODUCTION The grapes were harvested, stripped, crushed and processed separately. The wine was processed simply with contact with the skins for six hours, pressed and left to settle for 24 hours. It was then placed in barrels and inoculated with specially selected yeasts. The fermentation was carefully monitored to preserve the unique characteristics of the individual grapes and to develop their full potential.

PAIRING WITH FOOD It goes well with grilled chicken marinated in atchar (mango and chilli sauce), roasted fish and anchovies, as well as crispy fennel salad with truffles.
